The City of\u00a0Rennes is committed to a\u00a0municipal catering model that\u00a0is underpinned by local agroecological\u00a0production, the\u00a0prevention of food waste and the\u00a0reduction of greenhouse gases.<\/p>
Since 1999, Rennes\u2019 municipal\u00a0kitchen has centralised the\u00a0preparation of meals served\u00a0by various municipal services.\u00a0Around 12,500 meals are\u00a0prepared every day, 10,000 of\u00a0which are allocated to its 48\u00a0municipal schools. Thanks to\u00a0a firm commitment to foster\u00a0short supply chains, the city\u00a0has managed to ensure that\u00a0around 80% of suppliers are local\u00a0producers (15% of which are BIO\u00a0certified). However, a national law\u00a0passed in 2018 establishes that,\u00a0as of January 2022, 50% of the\u00a0food products used in collective\u00a0catering must be sustainably\u00a0produced.<\/p>
Within this context, several\u00a0difficulties have been identified\u00a0with regard to the achievement\u00a0of the required sustainability\u00a0indicators, such as: the legitimate\u00a0cost overrun of sustainable and\u00a0organic food production, The\u00a0imbalance between the needs\u00a0of the municipality and those\u00a0of producers, and the detection\u00a0of practices that generate food waste.<\/p>
In order to address this\u00a0situation, since 2016 the local\u00a0government has promoted the\u00a0formulation of a Sustainable\u00a0Food Plan, developed through a\u00a0participatory approach among\u00a0different municipal departments,\u00a0agricultural producers,\u00a0distributors, social institutions\u00a0and citizens. The aim of the\u00a0Plan is to foster the necessary\u00a0actions to ensure that, by the\u00a0end of 2020, the municipal\u00a0catering system guarantees:\u00a020% of products procured from\u00a0sustainable agriculture, 20% of\u00a0products with a BIO certification,\u00a0and a 50% reduction in food\u00a0waste.<\/p>
